Middle Eastern Chicken

Finger licking no fuss baked chicken! This is one chicken you will make over and over again! Chicken can be made in so many different ways and I love that it is so easy to make. You can make this with any kind of chicken bone-in or boneless; with skin or without. I use what I had on this paticular day, which was chicken thighs done-in. Most of seasoning for this dish is probably already in your pantry. This is so easy that you don’t need exact measurements. You can add a little or a lot depending on how much seasoning you like.

Ingredients:

  • Bone-in chicken thighs
  •  Onion powder
  • Garlic powder
  • Dry Thyme
  • Oregano
  • Marjoram
  • Salt
  • Lemon pepper
  • Cumin
  • Allspice
  • Bay leaf
  • Paprika
  • Olive oil
  • Lemons (optional)
  • Red pepper flakes (optional)

You can prepare this in the same oven safe dish you will use to cook in. Start off with cleaning and drying off the chicken. Then make several slits on them before adding the seasonings. Sprinkle all the seasonings onto the chicken making sure to coat the chicken well, just like applying a rub. You can also make this in bulk and save for later use in other dishes as well. Add in a good coating of olive oil. Here if you choose to, you can add juice of one lemon. It’s always a good idea to let it marinate for 30 minutes to and hour. Preheat oven to 400* degrees and cover with foil and cook for one hour. Half way through cooking remove the foil and baste chicken with its juices a few times to keep from drying out on top. The last part of cooking will brown the chicken perfectly. I’m pretty certain that you will enjoy this dish and maybe add or omit what makes it work for your family.
