Mouth Watering Lamb Chops

Don’t ever under estimate the power of lamb chops! This dish is one to tantalize your taste buds like never before! Best way to describe this dish would be, mouth watering, savory, flavorful, bold, herby (If that’s even a word), and intense. If you really want to impress your love ones then take the time to make this dish. They will thank you for it!

Ingredients:

  • 2 lbs of lamb chops ( about 10-12 chops slightly trimmed, a little fat is a good thing in this dish)
  • 1 large onion
  • 3 cloves of garlic
  • 2 handful of cilantro
  • 1/2 cup of mint
  • 1 tbsp of paprika
  • 1 tbsp of allspice
  • 1 tbsp of salt & pepper
  • 1 tsp of red pepper flakes (optional)
  • 1 tbsp of cumin seeds or ground cumin
  • 1 tbsp of rosemary
  • olive oil (to coat the chops)

If you have a food processor you may use that or you can use a blender as well. blend the onion, garlic, cilantro, mint, paprika, allspice, red pepper flakes, cumin,  and rosemary into a paste. You can add a little water to help with this process. Apply the mixture to the lamb chops and let is marinate for at least an hour, even better overnight. Apply enough olive oil to the lamb chops before putting into the oven and add just a little water to help with the cooking process. Preheat the oven to 375 degree and cover the lamb chops with foil. Yes, foil! We prefer our lamb chops falling off the bone and super juicy. Let it cook for 45 min before taking off the foil and turning the lamp chops over. Cook uncovered for another 30mins checking along the way with a fork. If you need to a little water along the way then do so to prevent burning. Now, you can grill these chops as well if you like. 3-5 min on each side depending on your liking of doneness.

Optional chutney to add on top or on the side:

  • Handful of chopped mint
  • 1/4 cup of olive oil
  • 2 cloves of garlic
  • 1 juice of lemon & lemon zest
  • 1 tsp of salt

serve this over the lamb chops or on the side, it adds great additional flavor. Traditionally,  I serve the chops with some hummus, and simple salad and pita bread. After eating this meal you will feel extremely happy and content. Hope you enjoy it as much as my family.
