Lentil Salad

Looking for something light and satisfying? This is a salad that can be eaten on its own or as a side dish with any meal.

Ingredients :

  • 1 1/2 cups of brown lentil
  • 1 cup feta cheese
  • 1 cup chopped parsley
  • 1 cup chopped fresh mint (optional)
  • 1-2 mini cuccumbers
  • 1/2 cup green onions or red onions
  • 2 large cloves of crushed garlic
  • salt & pepper to taste
  • 1 tsp of cumin
  • 1 tsp cayenne pepper (optional)
  • 1 juice of a large lemon
  • 1/3 cup olive oil
