Breakfast Eggs In A Pod

Breakfast does not always have to be the typical toast and eggs. Eggs are so versatile and can be jazzed up however you choose to do so. This recipe literally takes a few minutes to prepare and the cooking is done in the oven. No slaving over the hot stove! You can use whatever herbs you have in kitchen and spice it up with whatever you’re in the mood for.


  • Sandwich deli bread ( any type of bread will do as long as you can hollow the center out)
  • eggs
  • basil
  • green onions
  • onion powder (optional)
  • garlic powder (optional)
  • salt & pepper
  • oregano
  • Parmesan cheese (or feta or any other cheese of your liking)
  • olive oil

Pre-heat oven to 350 degrees. First, start off by slicing the bread of your choice in half and hollow out the center. Gently push the center so it is flat enough. Place each bread slice on cooking tray lined with parchment paper. Crack an egg inside each hollowed out bread. Now, this is the easy part, season the egg with salt & pepper, sprinkle on the onion powder, garlic powder, oregano, and the fresh herbs. Sprinkle on the cheese of your liking. Drizzle over a little olive oil and pop it into a 350* degree oven for 2o min. Again this is so versatile and can appeal to anyones palette!
