This soup can be made on cold winter days or cool summer nights! Soups are way of making ourselves feel good from the inside out. It has healing powers, and makes you feel warm to the soul. On rainy days it adds a sense of comfort along with warm yumminess to our tastebuds. You can make this soup with or without chicken. I have made both styles and love both ways. Today I choose to make it without chicken but you can follow recipe below for with or without.
Ingredients:
1 cup Shredded chicken (left over rotisserie chicken)
1/2 cup Chopped spinach
1 can 15oz cannellii beans
1 onion chopped
3-4 cloves garlic finely chopped
1 large bay leaf
2 cups of chicken stock ( more or less depending on how much you want to make)
1 1/2 tsp of Greek seasoning
1 tsp salt & pepper
1 whole or 1/2 lemon juice to squeeze on top
Cook:
Sauté the onions until transparent then add garlic & bay leaf. Just before it starts to brown add your beans & spinach. Let that cook for a few min, then add your spices ( Greek seasoning, salt & pepper) let that mix well then add your chicken stock. Bring to a boil and turn heat down to medium low. After 10-15 min add the chicken and squeeze the lemon. Cook for another 10min.
