Meal Planning- Chicken Done 3 Ways

Chicken! Chicken the go to poultry of choice in most households. Trying to figure out what to make everyday can sometimes be difficult. These days, it has become more and more common to plan meals for the week. I have received some requests to help with different flavors for chicken that is versatile and can go with pretty much anything.

These are just a few different flavors you can try out with sandwiches, salads, wraps or just by itself with a side dish.  You can use whatever chicken of choice like chicken breasts, thighs, bone-in or out, cubed, chicken tenders and any other chicken cut of choice.

These recipes are just to give you a choice of spices and flavors to mix up your chicken recipes! Don’t be afraid to explore new flavors or maybe add in an ingredient or two that you may think will enhance any of these flavors!

Greek Yogurt Marinade:

Ingredients: 

  1. 1 cup greek yogurt
  2. 3 tbsp of olive oil
  3. 4-5 cloves of garlic or 2 tbsp of garlic powder
  4. 2 tbsp of onion powder
  5. 1 tbsp of oregano
  6. 1 tbsp of lemon zest
  7. juice of 1 lemon
  8. 1 tsp of black pepper
  9. 2 tbsp salt
  10. 1 tsp of cumin powder
  11. 1 tbsp of dried rosemary or fresh chopped rosemary
  12. 2-4 lbs of chicken
  • Mix all ingredients into a large bowl. Before adding in the chicken, taste the marinade just to see in any adjustments need to be made.
  • Add chicken and let it marinade at least an hour or if you prefer you can do overnight.
  • You can cook the chicken in the oven at 425* for 15-20 min depending on the thickness of the meat or cook it in a pan for 10 min.
  • You can cook the chicken a head of time or cook before serving.

 

Lemon Herbed Chicken:

Ingredients:

  1. 2-4 lbs bone in or boneless chicken breasts (skin on or off)
  2. 3 tbsp of minced garlic
  3. 2 tsp of lemon zests
  4. juice of 1 lemon
  5. salt & pepper
  6. 1 1/2 tsp of dried thyme
  7. 1 1/2 tsp dried oregano
  8. 1 1/2 tsp dried sage
  9. 2 tsp of white vinegar
  10. 1 tbsp onion powder
  11. Fresh parsley
  12. 1/3 cup olive oil
  • mix all ingredeints in bowl with chicken.
  • marinade for 30 min
  • place chicken in 9 x 13 inch baking dish
  • cook in oven at 400* 30-40 min, while basting chicken with its juices ever now and then.
  • Last 2-3 min turn the oven on broiler to brown the chicken on top (optional)
  • Let it rest for 5 min and serve

 

Quick Curry Spiced Chicken:

Ingredients: 

  1. 3-4 lbs of chicken breasts or cubed chicken
  2. 1 cup of yogurt
  3. 3-4 tbsp olive oil
  4. salt & pepper
  5. 1 1/2 tbsp curry powder
  6. 1 tsp of tumeric powder
  7. 1 tsp paprika
  8. 1 tsp cayenne pepper
  9. 1 tsp cumin powder
  10. 1 tbsp onion powder
  11. 1 tbsp garlic powder or 3 cloves of fresh minced garlic
  12. 1 tsp fresh chopped mint or dried mint
  13. 1/3 cup fresh chopped cilantro (reserve a little for garnish)
  • Mix ingredients in a bowl and taste before adding chicken
  • Add chicken
  • marinate for at least an hour or overnight
  • Cook in the oven 400* for 20-25 min
  • let sit for 5 min, garnish with lemon & cilantro
